Weeknight Pantry Pasta

16 oz pasta of your choice
25 oz jar of marinara sauce
5 oz fresh baby spinach
1, 6 oz jar of kalamata olives, halved
1 container Kite Hill Ricotta
Step 1.
Cook noodles according to package directions. Drain, reserving 3/4 cup of pasta water.
Step 2.
Put pasta back into pot over low heat. Add sauce and spinach, stir until spinach cooks down slightly.
Step 3.
Add olives and ricotta. Stir to combine, adding 1/4 - 3/4 cup pasta water until desired consistency is reached (we used about 1/3 cup).
Step 4.
Taste and adjust seasoning, adding salt, red pepper flakes, garlic and onion powder depending on sauce.
