Herbed Cucumber Salad
2 large English cucumbers
1/2 cup Kite Hill Original Plain Unsweetened Yogurt
1/4 cup red onion, chopped
1/4 cup dill, chopped
1/4 cup parsley, chopped
2 tablespoons apple cider vinegar
1/2 teaspoon garlic powder
1/4 teaspoon each salt + pepper
Step 1.Wash cucumbers and slice in half lengthwise. Cut the cucumber into small 1/2 - 1 inch sections,and toss them into a large mixing bowl with the red onion. Set aside.
Step 2.In a separate, smaller bowl whisk together the yogurt, dill, parsley, apple cider vinegar, garlic powder, salt, and pepper. Pour the yogurt mixture over the cucumber and onions and toss to combine.
