Combining fresh strawberries with Kite Hill Plain Cream Cheese, this chia pudding has the taste and consistency of cheesecake and it's completely plant-based.
15 minutes prep, 4 hour chill time
1 cup fresh strawberries, sliced
⅓ cup Kite Hill Plain Cream Cheese-Style Spread
1 teaspoon lemon zest
Juice of 1 lemon
¼ teaspoon salt, plus more to taste
1 teaspoon vanilla extract
3 tablespoons maple syrup
⅔ cup chia seeds
Toppings (optional): fresh strawberries, coconut, cacao nibs, fresh mint
Step 1. Blend all ingredients except for the chia seeds together in a high speed blender for 15-30 seconds or until smooth.
Step 2. Pour into a glass container, then stir in the chia seeds.
Step 3. Let sit for 5 minutes, then stir again. Place in the fridge to let thicken overnight, or for at least 4 hours.
Step 4. Divide evenly into serving bowls, and top as desired.
